    It’s been soup season in our house every since the temperatures dropped. So far we’ve made Chicken Gnocchi Soup and Lasagna Soup. And the newest one is this tortellini soup.

    It was a huge hit in our house and the perfect comfort food filled with hearty meats, veggies and tender tortellini. It also makes plenty of leftovers so you can eat throughout the week.

    • Canned Tomatoes
    • Onions
    • Parmesan Cheese
    • Spinach
    • Vegetable Broth
    • Cream Cheese
    • Thyme

    How to Make Tortellini Soup

    1. In a pan, brown sausage until pink is gone and drain.
    2. Add browned sausage to the slow cooker. Pour in the vegetable broth. Dump in tomatoes, juice and all. Add seasonings, cream cheese, diced onions and tortellini.
    3. Cover and cook on low for 4-6 hours.
    4. For the last 30 minutes add spinach and parmesan cheese. Cover and cook.
    5. Serve hot and garnish with additional Parmesan cheese if desired.

    • Make sure to brown the sausage before adding it to the slow cooker. This will give the soup more flavor.
    • If you want a creamier soup, add some half and half or heavy cream during the last hour of cooking.
    • Save time by cooking the sausage the day before and store it in the fridge until you’re ready to make the next day.

    To Store: Store leftovers in an airtight container in the fridge for up to four days. If you find that your soup is starting to dry out or get too thick, simply add a bit of water or broth when reheating. This will help to thin it out and make it just as tasty as the day you made it.

    To Freeze: Allow to cool and store in an airtight container in the freezer for up to 3 months. I would suggest to freeze in individual portions. That way, you can thaw and heat up only what you need.
