Recipe Tips
- Make sure to brown the sausage before adding it to the slow cooker. This will give the soup more flavor.
- If you want a creamier soup, add some half and half or heavy cream during the last hour of cooking.
- Save time by cooking the sausage the day before and store it in the fridge until you’re ready to make the next day.
How to Store
To Store: Store leftovers in an airtight container in the fridge for up to four days. If you find that your soup is starting to dry out or get too thick, simply add a bit of water or broth when reheating. This will help to thin it out and make it just as tasty as the day you made it.
To Freeze: Allow to cool and store in an airtight container in the freezer for up to 3 months. I would suggest to freeze in individual portions. That way, you can thaw and heat up only what you need.
Recipe Variations
Tortellini soup is a versatile dish that can be easily customized to suit your taste. Here are some simple recipe variations to get you started:
- For a heartier soup, add more veggies like carrots and celery.
- Swap out the vegetable broth for chicken broth for beef broth for a different flavor.
- Add some chopped kale to the soup for an extra dose of greens.
- Stir in a cup of cooked cannellini beans or chickpeas for added protein and fiber.
- Give the soup a bit of a kick by adding a pinch of crushed red pepper flakes or use chorizo in place of sausage.
