    What You Will Need

    • Chicken breasts – boneless, skinless and cut into bite-sized pieces.
    • Potato gnocchi – fresh or frozen works in this recipe.
    • Chicken broth – brings out the flavor in the chicken.
    • Milk – whole milk works best and makes it creamy.

    1. Add chicken breasts to crock pot and season with salt, pepper, thyme and garlic.
    2. Place diced onions, celery and carrots on top. Pour chicken broth in, cover and cook on low for 6-8 hours or high for 4-6 hours.
    3. In a bowl whisk together milk and flour. Pour into crockpot along with potato gnocchi, parmesan cheese and spinach. Stir, cover and cook on low for 30 minutes or high for 15 minutes or until potato gnocchi is cooked through.
    4. Serve in a bowl and enjoy!

    • Add in extra vegetables, like broccoli, kale, or peas.

    • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
    • 1 16 oz package of potato gnocchi
    • 4 cups chicken broth
    • 2 cups whole milk
    • ¼ cup flour
    • ¼ teaspoon salt
    • ¼ teaspoon black pepper
    • ½ large onion diced
    • 1 tbsp garlic minced
    • 1 /4 teaspoon thyme
    • 2 carrots peeled and diced
    • 2 celery stalks diced
    • ½ cup grated Parmesan cheese
    • 2 cups baby spinach
