Pumpkin Spice Cookies with Cream Cheese Frosting
Ingredients
- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground cloves
- ½ teaspoon salt
- ½ cup butter, softened
- 1 ½ cups white sugar
- 1 cup canned pumpkin puree
- 1 egg
- 1 teaspoon vanilla extract
Ingredients for Icing
(can also use cream cheese frosting from the store if you don’t have time to make)
- ½ cup softened butter
- ½ cup softened cream cheese
- 2-3 cups powdered sugar (2 ½ cups was about the right sweetness for my taste).
- 1 tsp. vanilla extract
Directions
- Preheat the oven to 350 degrees. Combine flour, Baking soda, Baking powder, cinnamon, nutmeg, and salt in a medium bowl and set aside.
- In your mixer, cream together the butter and white sugar.
- Add pumpkin, egg, and vanilla to the butter mixture, and beat until it is creamy.
- Add all of the dry ingredients gradually and beat until combined.
- Drop on cookie sheet by tablespoonfuls. The dough will be pretty soft.
- Bake in the oven for 15 to 20 minutes.
- In another bowl, add the cream butter and cream cheese together in the mixer. Slowly add the powdered sugar and mix until it is thick and creamy; then add the vanilla into the mixture.
- When the cookies are cooled, spread the frosting on top of the cookie with a spatula.
