Pumpkin Spice Cookies with Cream Cheese Frosting

Ingredients

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • ½ teaspoon salt
  • ½ cup butter softened
  • 1 ½ cups white sugar
  • 1 cup canned pumpkin puree
  • 1 egg
  • 1 teaspoon vanilla extract
  • Ingredients for Icing
  • can also use cream cheese frosting from the store if you don’t have time to make
  • ½ cup softened butter
  • ½ cup softened cream cheese
  • 2-3 cups powdered sugar 2 ½ cups was about the right sweetness for my taste.
  • 1 tsp. vanilla extract

Instructions

  • Preheat the oven to 350 degrees. Combine flour, Baking soda, Baking powder, cinnamon, nutmeg, and salt in a medium bowl and set aside.
  • In your mixer, cream together the butter and white sugar.
  • Add pumpkin, egg, and vanilla to the butter mixture, and beat until it is creamy.
  • Add all of the dry ingredients gradually and beat until combined.
  • Drop on cookie sheet by tablespoonfuls. The dough will be pretty soft.
  • Bake in the oven for 15 to 20 minutes.
  • In another bowl, add the cream butter and cream cheese together in the mixer. Slowly add the powdered sugar and mix until it is thick and creamy; then add the vanilla into the mixture.
  • When the cookies are cooled, spread the frosting on top of the cookie with a spatula.
