A party is not a party without mermaid cupcakes at least at my party. I’m a lover of all things mermaid so I can never resist creating anything mermaid-ish such as these mermaid Easter eggs. I love how these cupcakes turned out and think they are perfect for the ultimate mermaid birthday party. I will tell you that it will take some patience to make these but you’ll love the results in the end.
Mermaid Tail Cupcakes
How to Make Mermaid Sprinkles
Use 1 pouch of Light green, Light Blue, and Purple Nonpareil’s and sprinkle Jimmies and combine all 6 pouches into a bowl and mix until completely combined.
How to Make Mermaid Tails
Ingredients
- 1 mermaid silicone fondant mold
- 1 tube of Pink fondant
- 1 cup of corn starch
- 1 food safe paint brush
- 1 can of gold cake spray
Directions
Lightly powder your hands with the cornstarch and start to work the fondant until it becomes soft and easy to work with.
Using one of the brushes, dip it into the cornstarch and lightly coat the silicon mold.
Tear off a tablespoon amount of fondant and mold it into the tail mold.
Once that is done, let it sit for 5-10 minutes before flipped over the mold and carefully push out the fondant tail out of the mold.
Once all tails have been molded, spray the top of the tail with the gold spray.
Let the mold dry for 1 hour.
Mermaid Tail Cupcakes
Makes 18 Cupcakes
Ingredients
- 1 box of vanilla cake mix
- 3 eggs
- 1/2 C of softened unsalted sweet cream butter
- 1 C whole milk
- 1TBSP pure vanilla bean paste
- cupcake liners
- cupcake pan
Directions for Cupcakes
Preheat oven to 350 and line cupcake pan with the liners.
In a medium bowl, combine the cake mix, butter, milk, and vanilla bean pasta and mix until combined.
Using a medium ice cream scoop, scoop the batter into the cupcake liners and fill about 3/4 of the way full.
Bake in the oven for about 21 minutes.
Pull out and place on the side to cool.
Frosting Ingredients
- 1 C unsalted sweet cream butter, softened
- 2 1/2 C powder sugar
- 1 tsp vanilla
- 3-5 TBSP heavy whipping cream
- pink and blue gel food coloring
- 1 disposable piping bag
- 1 disposable piping bag with a star tip
- 1 C mermaid sprinkles
Directions for Frosting
Using a standing mixer, combine all ingredients and mix on medium speed.
If your frosting starts looking like powdery rocks, add another tablespoon of heavy whipping cream.
Mix until you see creamy stiffed peaks.
Once the frosting is made, split it into two bowls.
Add about 2 drops of each color in their own bowls and mix until the color is completely mixed.
Scoop the pink frosting into the first disposable piping bag.
Scoop the blue frosting into the second disposable piping bag with the star tip.
Decorating Directions
Using the pink frosting, pipe a medium size dollop onto the top of the cupcake.
Use a butter knife and smooth out the frosting all around the top of the cupcakes.
Dip the top of the cupcake into the mermaid sprinkles.
Using the blue frosting, pipe a medium dollop into the center of the cupcake.
Insert in your mermaid tail.
