With just a few ingredients and one pan, this Classic Ground Beef Stroganoff recipe makes an easy weeknight dinner. Serve it over egg noodles, rice or mashed potatoes for a delicious meal in under 30 minutes!

Ground beef stroganoff is a classic, hearty, comfort meal that has all the favorite flavors. It’s a perfect combination of ground beef and creamy sour cream, with just a hint of onion.
This recipe uses ground beef instead of stew meat, which makes it a cinch to whip up on the fly. Your family will want you to make this dish over and over again.
Tips for Making Beef Stroganoff
- Use a substitute for sour cream. If you don’t have sour cream on hand, Greek yogurt is a great substitute. Greek yogurt has a similar taste to sour cream, but with less fat and calories.
- Add cornstarch to thicken the sauce. To thicken the sauce, you can use 1-2 tablespoons of cornstarch. Mix equal parts of cornstarch and cold water, then slowly add to your sauce and stir well to combine. Bring the sauce to a boil and simmer for a few minutes until it has thickened slightly.
- Add in mushrooms. This recipe does not have mushrooms in it. Some people are not a fan of them like myself. Some like to add mushrooms, because they add a nice earthy flavor. If you’d rather skip the mushrooms, just leave them out! It’s totally optional!

1 lb. ground beef
2 tablespoons butter
½ teaspoon salt
⅛ teaspoon black pepper
2 tablespoons flour
1 cup sour cream
1 cup water
3 tablespoons Lipton onion dry soup mix
Optional: 8-10 ounces wide egg noodles, cooked according to package directions
How to Make Stroganoff with Ground Beef
Heat a skillet over medium heat and melt butter. Add ground beef to skillet, season with salt and pepper and saute until browned.
Sprinkle flour over browned ground beef and mix together. Slowly add water to skillet, allow to simmer for about 3-5 minutes. Stir until thickened and remove from heat.
In a bowl mix together sour cream and dry onion soup mix. Add the mixture to the ground beef in skillet and mix together. Return to heat and simmer for about 3-5 minutes.
Serve over cooked noodles, pasta, rice or toasted hamburger buns.
Storing and Reheating
- To Store: Place remaining leftovers in an airtight container and store in fridge for up to 4 days.
- To Reheat: Heat on stovetop or in microwave until warm.
