These Mini Cheesy Beef Tacos are a family favorite! Filled with ground beef, onion, seasonings and melted cheese all on a crispy tortilla.

We love the mini street tacos kits sold at Costco and always pick one up when we shop there. But when we can’t get to the store, we resort to making mini street taco tortillas at home.
The ingredients are simple and also make a great game day appetizer option instead of dinner. I like making cooking the ground beef on the Blackstone griddle but you can also cook inside on the stove.

Ingredients
- Ground Beef: I used 80/20 ground beef but you can also use a leaner option of 90/10.
- Onion: I like to saute a chopped onion for flavor but you can also skip this.
- Taco Seasoning: To keep it simple I used taco seasoning in a packet. You can also use a blend of your own seasonings or homemade taco seasoning.
- Cheese: I used mild cheddar but you can use any of your favorite shredded cheeses.
- Tortillas: I used street tacos flour tortillas but you can also use corn tortillas.
- Oil: Used making the tortillas crispy and sauteing the onion.
How to Make Beef Crispy Tacos


Heat 1 tablespoon of oil on a griddle over medium heat. Add the chopped onion, ground beef, and seasonings. Cook until the beef is browned and fully cooked, then drain any excess grease.


On the other side of the griddle, heat 2 tablespoons of oil. Place the tortillas down and lightly cook on both sides.


Add a generous handful of cheese to one half of each tortilla, then top with the cooked beef mixture. Fold the tortillas in half and cook on both sides until golden and crispy.
Transfer the mini tacos to a plate lined with paper towels to soak up any excess grease. Serve with your favorite taco toppings and enjoy!

Helpful Tips & Substitutions
- Make sure to drain the grease from the ground beef to avoid over greasy tacos.
- Top the mini tacos with any of your favorite toppings. Pico de gallo is a favorite too!
- Can add a can of beans to the ground beef mixture.
- Swap ground beef for ground turkey or shredded chicken.
- Can use your own blend of seasoning instead of a taco packet seasoning.
- Any size tortilla will work.
- Choose your favorite shredded cheese.
Storing Leftovers
Best enjoyed fresh, but if you have leftovers, store them in an airtight container for a few days. Reheat in the oven at 350 degrees for about 5 minutes or until warmed until your liking.

- 1 Medium Onion chopped
