Cheesy Beef Tacos
These Mini Cheesy Beef Tacos are a family favorite! Filled with ground beef, onion, seasonings and melted cheese all on a crispy tortilla.

- 1.5 lb. Ground Beef
- 1 Medium Onion chopped
- 2 Packages Taco Seasoning
- 2 Cups Shredded Cheese
- 1 Package Mini Tortillas 12 count
- 3 tbsp Oil more if needed
Heat 1 tablespoon of oil on a griddle over medium heat. Add the chopped onion, ground beef, and seasonings. Cook until the beef is browned and fully cooked, then drain any excess grease.
On the other side of the griddle, heat 2 tablespoons of oil. Place the tortillas down and lightly cook on both sides. Add a generous handful of cheese to one half of each tortilla, then top with the cooked beef mixture. Fold the tortillas in half and cook on both sides until golden and crispy.
Transfer the mini tacos to a plate lined with paper towels to soak up any excess grease.
