8oz package Portobello mushrooms, washed and de-stemmed
4oz cream cheese, softened
4oz mozzarella cheese, shredded
1 small Roma tomato, diced
¼ cup mini pepperoni slices
How to Make Pizza Stuffed Mushrooms
Preheat oven to 350 degrees F.
Wash, wipe dry and remove the stems from the mushrooms. Prepare a baking sheet and place the mushroom caps on top leaving a space in between each one.
Wash, dry and dice tomato. In a small bowl, combine softened cream cheese, mozzarella cheese, and tomatoes. Stir together.
Spoon a heaping amount of the mixture into each mushroom cap. Place mini pepperoni slices on top of mushrooms.
Bake 12-14 minutes, until cheese is melted and mushrooms are tender. Remove from oven, and serve hot.
