- 8 oz package Portobello mushrooms washed and de-stemmed
- 4 oz cream cheese softened
- 4 oz mozzarella cheese shredded
- 1 small Roma tomato diced
- ΒΌ cup mini pepperoni slices
Preheat oven to 350 degrees F.
Wash, wipe dry and remove the stems from the mushrooms. Prepare a baking sheet and place the mushroom caps on top leaving a space in between each one.
Wash, dry and dice tomato. In a small bowl, combine softened cream cheese, mozzarella cheese, and tomatoes. Stir together.
Spoon a heaping amount of the mixture into each mushroom cap. Place mini pepperoni slices on top of mushrooms.
Bake 12-14 minutes, until cheese is melted and mushrooms are tender. Remove from oven, and serve hot.
Tips for Making Stuffed Mushrooms
When choosing the mushrooms for stuffing, look for big caps with small stems. Make sure there are no bruises or cracks to the mushroom tops.
Always clean mushrooms before cooking them - do not use any that are slimy or smelly.
Wash in a sink of cold water and dry on paper towels then brush the mushrooms with a clean, damp cloth to remove any dirt.
Cooked mushrooms should be served while they are still hot.
