Tips for Making Mini Cheesecakes
- Make sure the cream cheese is at room temperature for this recipe. I like to take it out of the fridge a few hours before I bake.
- Avoid using light or fat-free cream cheese. It tastes better with the real stuff.
- Don’t skimp on the cooling and chill process. This is the most important process of the recipe to help it set. Make sure to cool it down after baking and refrigerate for at least 2 hours.
