Meltaway Cookies Ingredients & Substitutions
- Butter: I used unsalted butter but you can use salted butter if you like salt in your baked goods. It won’t make a big difference in the taste.
- Powdered sugar: This will keep the cookies nice and soft.
- Vanilla: I added vanilla to make these vanilla meltaway cookies. You can switch it up with different flavor extracts such as mint, vanilla, etc.
- Flour: Use all purpose flour for this recipe for best results.
- Cornstarch: This is what makes the cookies dissolve in your mouth.
How to Make Meltaway Shortbread Cookies
Preheat the oven to 350°F and line a baking sheet with parchment paper.
In a stand mixer, cream the softened butter and powdered sugar until smooth. Add the flour, vanilla, and cornstarch, mixing until thoroughly combined and scraping down the sides as needed.
Scoop out one tablespoon of dough, shape into a ball, and place on the baking sheet an inch apart. Bake for 12-15 minutes, until the cookies are no longer glossy and the bottoms are slightly browned.
