    These Meltaway Cookies are easy to make with just 5 ingredients and just like the name, it “Melts in your Mouth”. They make great gifts and can be made ahead of time.

    If there is one cookie that disappears from the dessert table, it would be meltaway cookies. There are everyone’s favorite and make the best Christmas gifts.

    They’re light and flavorful with a hint of vanilla. I recommend making a double or triple batch because they don’t last long.

    Meltaway Cookies Ingredients & Substitutions

    • Butter: I used unsalted butter but you can use salted butter if you like salt in your baked goods. It won’t make a big difference in the taste.
    • Powdered sugar: This will keep the cookies nice and soft.
    • Vanilla: I added vanilla to make these vanilla meltaway cookies. You can switch it up with different flavor extracts such as mint, vanilla, etc.
    • Flour: Use all purpose flour for this recipe for best results.
    • Cornstarch: This is what makes the cookies dissolve in your mouth.

    How to Make Meltaway Shortbread Cookies

    Preheat the oven to 350°F and line a baking sheet with parchment paper.

    In a stand mixer, cream the softened butter and powdered sugar until smooth. Add the flour, vanilla, and cornstarch, mixing until thoroughly combined and scraping down the sides as needed.

    Scoop out one tablespoon of dough, shape into a ball, and place on the baking sheet an inch apart. Bake for 12-15 minutes, until the cookies are no longer glossy and the bottoms are slightly browned.

    Let cool and enjoy.

    Helpful Tips and Variations

    • Use real butter for the best tasting cookies.
    • You can add icing to the top of the cookies or dip them in melted chocolate.
    • The dough may be crumbly, this is normal.
    • Add nuts such as pecans or pistachios to the dough to change it up.
    • Use a cookie scoop to get the same size cookies.

    Storing Leftovers

    Place leftover cookies in an airtight container. Store in the fridge for up to 3 days or freeze for up to 3 months. Thaw in fridge overnight.
