This Crockpot Taco Soup is an easy dump-and-go made with ground beef, beans, corn, tomatoes and taco seasoning. Add everything to the slow cooker and let it simmer into a hearty, flavorful soup the whole family can load up with their favorite taco toppings.

This is one of those recipes I love for busy days when I don’t want to think about dinner. It uses simple ingredients, there’s very little prep, and the crockpot does most of the work.
Set out bowls of shredded cheese, sour cream and tortilla chips and let everyone add their own toppings. Dinner doesn’t get much easier than that!

Crockpot Taco Soup Ingredients
- Ground beef: I like to use 80/20 but you can use any variety you’d like.
- Yellow onion: diced
- Canned beans: Kidney and black beans, drained and rinsed
- Canned vegetables: Corn (drained), diced tomatoes and diced tomatoes with green chilies, undrained
- Will also need: Beef broth and taco seasoning
How to Make Taco Soup in the Crockpot

Add the ground beef and diced onion to a skillet. Cook over medium heat until the beef is browned and the onion has softened. Drain excess grease.
Transfer the cooked beef and onion to the crockpot.

Add the black beans, kidney beans, corn, diced tomatoes, tomatoes with green chilies, beef broth and taco seasoning. Stir everything together.

Cover and cook on low for 6-8 hours or high for 3-4 hours.
Stir before serving and taste. Add salt and pepper if needed.
Ladle into bowls and add your favorite taco toppings.

Helpful Tips
- Make it easier: Brown the ground beef and onions ahead of time and keep it in the refrigerator until your ready to throw it in the crockpot.
- Adjust the consistency: If you like a thicker soup start with 1 cup of beef broth and add more if needed. For a soupier version, add an extra cup.
- Make it mild: Use mild diced tomatoes with green chilies and mild taco seasoning.
- Give it more heat: Add diced jalapeños, hot taco seasoning or a pinch of cayenne pepper.
- Swap the beans: Pinto beans are also delicious in this soup. Use whatever you already have in the pantry.

This soup can easily be a meal on its own, especially once you add all the toppings. You can also serve it with:

- Tortilla chips
- Cheese quesadillas
- Mexican rice
- Simple side salad
- Warm flour or corn tortillas

How to Store Leftovers
Allow the taco soup to cool and transfer it to an airtight container. Store in the refrigerator for up to 4 days.
Reheat individual portions in the microwave or warm a larger amount in a saucepan over medium-low heat.

Let the soup cool completely and transfer it to freezer-safe containers or bags, leaving a little room for expansion. Freeze for up to 3 months.
