    These Cookie Dough Billionaire Bars are layers of brownie, caramel, cookie dough and chocolate making them a delicious and easy dessert that is sure to impress!

    These billionaire bars are rich, gooey and go fast. One bite and you’ll wish you made more.

    They’re a twist on the classic, starting with a brownie base instead of shortbread, then layered with caramel, edible cookie dough and chocolate ganache.

    Sure they’re loaded with butter but worth every bite.

    Ingredients

    • Sugar: Granulated sugar and brown sugar.
    • Butter: Unsalted, ½ cup melted and ½ cup softened at room temperature.
    • Cocoa Powder: Unsweetened.
    • Caramels: Unwrapped.
    • Chocolate Chips: Semi sweet regular size.
    • You will also need: Vegetable oil, eggs, vanilla extract, salt, heavy cream, eggs, flour and 8X8 baking dish.

    Brownie layer: Mix melted butter and sugar until smooth. Add salt, cocoa, eggs, vanilla and flour. Mix into thick batter, spread in pan and bake.

    Caramel layer: Melt the caramels and pour evenly over brownie layer. Freeze until set.

    Cookie dough layer: Mix both sugars with softened butter until fluffy. Add cream, vanilla, salt and flour. Fold in chocolate chips and spread over caramel.

    Chocolate layer: Melt chocolate chips with a little bit of oil, spread over cookie dough and chill until set. Slice and serve!

    Helpful Tips and Variations

    • Make sure the caramel has harden before adding the cookie dough.
    • Insert a toothpick in the middle of the brownies to make sure they are all the way done cooking.
    • Cut with a warm knife by running it under warm water and then dry to get nice clean edges.
    • Don’t skip the freezer and fridge steps so they set properly.
    • Swap the brownie base for a shortbread base.
    • Sprinkle sea salt on top of caramel for a sweet and salty taste.
    • Add some chopped pretzels on top for some crunch.

    Storing Leftovers

    • Fridge: Store leftovers in an airtight container in the fridge for up to 4 days.
    • Freezer: Place in a freezer safe container with parchment paper in between each bar and store in freezer for up to one month. Thaw before serving.

    Ingredients
      

    Brownie Layer

    • 1 cup sugar
    • ½ cup unsalted butter melted
    • ¼ tsp salt
    • 1 cup unsweetened cocoa powder
    • 2 eggs
    • 1 tsp vanilla extract
    • ½ cup flour

    Caramel Layer

    • 2 tbsp heavy cream
    • 30 caramels unwrapped

    Cookie Dough Layer

    • ½ cup light brown sugar
    • ¼ cup sugar
    • ½ cup unsalted butter softened to room temperature
    • 2 tbsp heavy cream
    • 1 tsp vanilla extract
    • ¼ tsp salt
    • ¾ cup flour
    • ½ cup mini semi-sweet chocolate chips

    Chocolate Layer

    • 1 tbsp vegetable oil
    • 8 oz. mini semi-sweet chocolate chips

    Instructions
     

    • Preheat oven to 325 degrees F. Line an 8X8 baking dish with parchment paper, making sure the sides are fully covered and there’s a bit hanging over the edge so you can lift the bars out later.
    • In a large bowl, mix together the sugar and ½ stick of melted butter using a hand mixer until smooth. Add in the salt and cocoa powder, then mix again until fully combined.
    • Next, beat in the eggs and vanilla. Add the flour and continue mixing until everything is blended into a thick brownie batter. Pour the batter into the prepared baking dish, spread out evenly and bake for 20-25 minutes.
    • Wait till brownies are close to being done baking and make the caramel layer. In a small microwave-safe bowl, add the heavy cream and caramels. Microwave in 30 second intervals, stirring in between, until mixture is melted and smooth.
    • Pour the warm caramel over the baked brownies and spread out evenly. Let the pan cool for about 10-15 minutes, then place in freezer for 25 minutes or until caramel is harden.
    • While the caramel sets in freezer, make the cookie dough layer. In a large bowl, mix together the brown sugar, regular sugar and ½ cup of softened butter until light and fluffy.
    • Add the heavy cream and vanilla and mix again. Stir in the salt and flour, then fold in the chocolate chips. Spread the cookie dough layer over top of harden caramel.
    • For the final layer, melt the remaining chocolate chips with a bit of oil in a microwave-safe bowl in 30 second intervals, stirring in between until smooth. Pour the melted chocolate over the cookie dough and spread evenly.
    • Place the pan in the fridge to set. Once firm, slice into bars and enjoy!
