We’ve officially started our summer break and it’s time to break out all the fun treats for the kids to enjoy. I love making these Popsicle Rice Cereal Treats and decorate them our own unique way. When the Rice Krispie cereal goes on sale at the grocery store is a good time to stock up for these treats. I found the paper straws at the dollar store in the craft section or you can find them at any craft store.
I made them square just cause it’s easier but you can also mold them by hand and round out the edges. You can dip, sprinkle, and frost anyway you like them. It’s a great activity to do with the kids when your looking for something to do.
Popsicle Rice Cereal Treats
Ingredients for Rice Krispie Treats
- 6 cups Rice Krispies Cereal
- 3 tbsp Butter
- 10.5 oz Marshmallows
Directions to Make Rice Krispie Treats
- Grease a 13x9x2″ pan.
- In a medium to large saucepan, melt the butter over low heat.
- Add the marshmallows and stir until completely melted.
- Remove from heat.
- Add the Rice Krispies cereal and stir until cereal is well coated.
- Allow to set about 4 minutes.
- Butter a your hands and press mixture into prepared pan.
- Allow to set before cutting into squares for the popsicles.
Ingredients and Supplies for Popsicle Rice Cereal Treats
Yields: Half a dozen decorated rice cereal treats
- 6 rice cereal treats
- 2 paper straws
- ¼ cup butter, softened
- 1 cup confectioners’ sugar
- 1 tbsp cocoa powder
- Brown gel food coloring
- 1-2 tbsp milk
- 1-2 tbsp sprinkles
Directions to Make Popsicle Rice Cereal Treats
After the Rice Kripies have set, cut them into 2X3 rectangle shapes.
Cut your straws into thirds. Insert one straw at the bottom of each rice cereal treat.
Lay a piece of parchment paper on a cookie sheet and set the popsicle treats on to decorate.
Using an electric mixer, beat together butter, confectioners’ sugar, cocoa powder and milk.
Once your buttercream starts to form (ie.: is smooth and forms semi-stiff peaks), add some brown gel food coloring to make the color richer. Mix until completely combined.
Scoop your buttercream into a piping bag with Wilton frosting tip #8 attached.
Frost the top of each rice cereal treat, covering it almost in its entirety: pipe out the bottom so that it looks like it’s “dripping.” You can even add some “drops” if you’d like!
Use an offset spatula to smooth out the chocolate buttercream.
Sprinkle each cereal treat, pressing down gently to ensure the sprinkles don’t fall off.
Serve and enjoy!

Why did my Rice Krispie treats turn out gooey?
This means you did not add enough marshmallows. The more marshmallows the better. The marshmallows help keep the treat together and when you don’t add enough they fall apart.
Why did my Rice Krispie treats turn out hard?
The reason is probably that you had the stovetop on too high. I have to tell myself this multiple times to have the patience to melt everything slowly cause if you don’t your rice krispie treats will turn out hard.
