How to Make Mexican Beef and Rice Skillet
Step 1: Heat olive oil in a large skillet over medium-high heat. Add onions and garlic and sauté until translucent.
Step 2: Add the ground beef, season it with the seasonings and cook until browned. Drain excess grease if needed.
Step 3: Add the diced bell pepper and cook for 4-5 minutes until softened.
Step 4: Add beef broth and rice and stir together. Cover and simmer for about 1 minute.

Step 5: Add tomato sauce, beans, corn and Rotel to the skillet. Stir, cover and bring to a boil, then reduce heat to low and simmer for about 5 minutes.
Step 6: Remove lid, sprinkle with shredded cheese evenly over top. Cover for about 2-3 minutes or until cheese is melted.

Step 7: Garnish with cilantro and green onions if desired and serve warm.
