These Gingerbread Energy Bites require no baking at all and keep you energized when you need it the most. They are healthy and even great to take with you for a snack on the go. They also freeze well so you could make a big batch ahead of time and freeze them in an air tight container for up to 3 months. When you’re ready to eat, thaw out and enjoy.
For this recipe you will need a food processing. I like to use the Ninja Food Processor. It’s easy to use, takes up little space and is powerful at 450 watts.
Gingerbread Energy Bites
Yields: 16-18
Ingredients
1 cup dates
¾ cup pecans
1 tablespoon molasses
1 tablespoon ground flaxseed
1 teaspoon cinnamon
½ teaspoon ground ginger
¼ teaspoon ground cloves
¼ teaspoon ground nutmeg
¼ teaspoon salt
Optional: 1 oz. 70% dark chocolate
Directions
Place a piece of parchment paper on a plate and set aside.
Place dates on a cutting board and slice down the center to remove the pits.
Roughly chop up the pitted dates and place them in a food processor. Pulse a few times until they break down into a thick paste consistency.
Add the remaining ingredients with the exception of the chocolate to the food processor and pulse until all ingredients are broken down and well incorporated.
Scoop up ingredients in a teaspoon and roll into a ball using clean hands. Place balls on prepared plate.
Place the dark chocolate in a small glass bowl and microwave until melted. Pour the melted chocolate into a small Ziploc bag and cut off just the edge of one corner.
Drizzle the melted chocolate over the energy balls. Place in the fridge to allow the chocolate to harden.
Serve.
Note: Store energy balls in an airtight container in the fridge for up to 1 week.
