Smoked sausage, sweet peppers and caramelized onions is a flavorful dish that’s delicious on its own or served over rice or buttered noodles.

One of my favorite meals to make on busy nights is this one pot sausage, peppers and onions. It’s incredibly easy to make, uses just a handful of ingredients and comes together quickly. The only real work is slicing the sausage and veggies.
The whole family will love this recipe and can even be prepped the night before. Just slice the sausage and veggies, store in the refrigerator, then toss everything in skillet when you’re ready to cook for a quick, no-fuss dinner.

Ingredients
- Bell Peppers: 3-4 peppers, any color, cut into long slices
- Smoked Sausage: sliced into less than half inch thick rounds
- Onions: sliced into rings
- Will also need: Italian seasoning, olive oil, minced garlic, salt and pepper
How to Make Sausage, Peppers and Onions
- Heat olive oil in a large skillet over medium heat.
- Add sliced sausage and season with half of the Italian seasoning, salt and pepper. Cook about 3-4 minutes on each side until lightly browned.
- Add sliced peppers and onions to the skillet, season with remaining Italian seasoning, minced garlic, salt and pepper. Cook for 8-10 minutes, stirring occasionally, until softened and caramelized.
- Serve hot as is, over noodles, rice or on a roll.
Helpful Tips and Variations
- Add mushrooms if you’d like.
- Add cubed potatoes for a more hearty meal (parboil first for faster cooking).
- For a kick, add sliced jalapenos or a pinch of red pepper flakes.
- Serve inside a warm tortilla or on a toasted sub roll.
- Use kielbasa instead of smoked sausage for a slightly different flavor.

Storing Leftover Sausage, Peppers and Onions
Place leftovers in an airtight container in the fridge for up to 3 days. Reheat in microwave until warmed through.
