Smoked Sausage, Peppers and Onions
Smoked sausage, sweet peppers and caramelized onions is a flavorful dish that's delicious on its own or served over rice or buttered noodles.

- 3-4 bell pepper, any color, cut into long slices
- 14 oz. skinless smoked sausage, cut into less than half inch rounds
- 1 large onion, sliced into rings
- 1 tablespoon Italian seasoning
- 1-2 tablespoons olive oil
- Salt and pepper, to taste
- 1 tbsp minced garlic
Heat olive oil in a large skillet over medium heat.
Add sliced sausage and season with half of the Italian seasoning, salt and pepper. Cook about 3-4 minutes on each side until lightly browned.
Add sliced peppers and onions to the skillet, season with remaining Italian seasoning, minced garlic, salt and pepper. Cook for 8-10 minutes, stirring occasionally, until softened and caramelized.
Serve hot as is, over noodles, rice or on a roll.
