Ingredients

  • 8-10 chicken drumsticks
  • 3 tbsp olive oil
  • 1 small onion diced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Assorted vegetables potatoes, carrots, broccoli, etc.

Instructions

  • Preheat the oven to 400°F.
  • Place the chicken drumsticks on a baking sheet lined with parchment paper or foil.
  • Chop the vegetables into bite-sized pieces and throughout baking sheet.
  • Add seasonings to a bowl and mix together. Pour olive oil over top chicken and veggies. Then, sprinkle seasonings over top.
  • Bake for about 35-40 minutes or until the chicken is cooked through and the vegetables are tender.

Notes

Store leftovers in an airtight container in the fridge for up to 5 days. Reheat in microwave to desired temperature.
