Slow Cooker Queso Chicken Tacos
Slow Cooker Queso Chicken Tacos are the ultimate taco night meal! With just a few ingredients and very little prep time, you can have a delicious and cheesy dinner ready in no time.

- 2-3 lbs. boneless skinless chicken breasts
- 1 packet taco seasoning (or homemade taco seasoning)
- 1 (4 oz.) can diced green chiles
- ½ cup chicken broth
- 1 (10 oz.) can Rotel with green chiles
- 1 (15 oz.) jar salsa con queso
- Optional toppings: diced avocado, sliced jalapenos, chopped cilantro, diced red onion, lime wedges
Place the chicken in the bottom of the slow cooker. Sprinkle taco seasoning over chicken. Add chicken broth, Rotel and green chiles on top.
Cover and cook on low for 6-8 hours or high 3-4 hours.
Shred chicken with 2 forks and pour salsa con queso over top. Stir to mix together. Cover and cook for an additional 15 minutes.
Sever over tortillas with your favorite taco toppings.
- Refrigerator: Store leftovers in an airtight container in the fridge for up to 3 days.
- Freezer: Allow to cool and place in a ziploc bag. Store in freezer for up to 2 months. Thaw in fridge overnight.
- Reheat: Heat to desired temperature in microwave.
