Slow Cooker Queso Chicken Tacos

Slow Cooker Queso Chicken Tacos are the ultimate taco night meal! With just a few ingredients and very little prep time, you can have a delicious and cheesy dinner ready in no time.

Ingredients

  • 2-3 lbs. boneless skinless chicken breasts
  • 1 packet taco seasoning (or homemade taco seasoning)
  • 1 (4 oz.) can diced green chiles
  • ½ cup chicken broth
  • 1 (10 oz.) can Rotel with green chiles
  • 1 (15 oz.) jar salsa con queso
  • Optional toppings: diced avocado, sliced jalapenos, chopped cilantro, diced red onion, lime wedges

Instructions

  • Place the chicken in the bottom of the slow cooker. Sprinkle taco seasoning over chicken. Add chicken broth, Rotel and green chiles on top.
  • Cover and cook on low for 6-8 hours or high 3-4 hours.
  • Shred chicken with 2 forks and pour salsa con queso over top. Stir to mix together. Cover and cook for an additional 15 minutes.
  • Sever over tortillas with your favorite taco toppings.

Notes

  • Refrigerator: Store leftovers in an airtight container in the fridge for up to 3 days.
  • Freezer: Allow to cool and place in a ziploc bag. Store in freezer for up to 2 months. Thaw in fridge overnight.
  • Reheat: Heat to desired temperature in microwave.
