Salmon Foil Packets

Salmon Foil Packets are a delicious and easy-to-make meal that combines salmon fillets with a variety of vegetables, all cooked together in a convenient foil packet.

Ingredients

  • 4 Salmon fillets
  • 4- 6 Red potatoes thinly sliced
  • 1 lb. Asparagus or any other preferred vegetable
  • Lemon slices
  • Fresh dill chopped (optional)
  • Olive oil
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 400°F.
  • Tear off large sheets of aluminum foil (big enough to easily wrap around the salmon and vegetables), one for each serving and place on a baking sheet.
  • Place the thinly sliced potatoes on the center of each foil sheet and season with salt and pepper.
  • Lay a salmon fillet on top of the potatoes. Then, arrange vegetables around the salmon.
  • Drizzle olive oil over top. Sprinkle with salt and pepper or seasoning. Place a lemon slice on top of each salmon fillet and add some chopped fresh dill if desired for extra flavor.
  • Bring up the sides of each foil sheet and fold them over the salmon and vegetables. Then, fold the ends to create sealed packets. Make sure the packets are well-sealed to trap steam and flavors inside.
  • Place the foil packets on a baking sheet and bake for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • Carefully open the foil packets (be cautious of hot steam) and transfer the contents to serving plates. You can serve the salmon and vegetables directly in the foil if you prefer.
  • Garnish with additional fresh dill and lemon wedges if desired.
