Panera Broccoli Cheddar Soup

- 1 small onion chopped
- 4 cups of fresh broccoli chopped
- 1 cup matchstick carrots
- 1 stalk of celery sliced thin
- 2 teaspoons salt
- 1 teaspoon black pepper
- 4 cups chicken stock
- ¼ cup butter
- ¼ cup flour
- 2 cups milk
- 3 cups sharp cheddar cheese
- Scallions for garnish
Add the onion, broccoli, carrots, celery, salt, pepper and chicken stock to your slow cooker.
Cover and cook on low for 5 hours or high for 3 hours.
After the soup is done cooking, melt the butter in the microwave using a microwave safe bowl. Whisk flour into the butter until combined. Add to the slow cooker and whisk together.
Stir in the milk and cheese and let cook another hour or until the cheese is melted.
Garnish with scallions and serve!
- To Store: Store leftovers in an airtight container for up to 3 days.
- To Freeze: Freeze the leftovers for up to 3 months in a freezer safe container. Thaw out in fridge overnight before reheating.
