Preheat the oven to 400 degrees F.
Prepare a muffin tin with cooking spray and set aside.
In a microwave-safe dish, melt butter in the microwave.
Set aside to cool.
In a medium bowl, add almond flour and baking powder.
In a bowl, lightly beat eggs and mix with melted butter.
Combine wet and dry ingredients in one bowl and mix them together.
Mix in shredded cheese until fully combined.
Pour batter evenly into a cupcake pan and bake for 14-16 minutes or until lightly browned.
Set aside and allow to cool.
Make Sausage Gravy
In a pan, brown sausage over medium heat until no longer pink. (do not drain pork fat).
Add ½ cup of heavy cream and stir till it thickens in the pan.
Add cream cheese and mix together. Once mixed, turn off the heat.
Assemble
Slice biscuits in half and put on a plate sliced side facing up. Top biscuits with sausage and gravy mixture and enjoy.
