- 1 ½ cups almond flour
- ½ tsp baking powder
- ⅛ tsp stevia extract
- 2 tsp poppy seeds
- Pinch of salt
- 4 large eggs
- ½ cup unsweetened almond milk
- 1 tsp vanilla extract
- 2 tsp banana extract
In a medium bowl, mix almond flour, baking powder, stevia extract, poppy seeds, and salt.
In a separate bowl, whisk the eggs, almond milk, vanilla extract, and banana extract, add it to the dry ingredients slowly while whisking until you have an even batter.
Preheat a griddle or nonstick skillet to medium heat, spray with oil. Using a ⅓ measuring cup pour batter onto it, let it cook until the pancakes have bubbles on top, flip to cook the other side for about 1 minute and remove.Repeat the process until you have used all the batter.
Serve warm with your favorite toppings.
