- 1 pint heavy whipping cream
- 1 - 14 oz can sweetened condensed milk
- 1 cup key lime juice I used Nellies from Key west
- 1 lime sliced
- 1 graham cracker pie crust
Add a whisk attachment to a stand or hand (this method takes longer) mixer.
Place heavy whipping cream to bowl and blend for 4 minutes (longer if using a hand mixer) on low speed. Adjust to speed 6 as it begins to thickens and resembles whipped topping.
Fold in can of sweetened condensed milk. Fold in key lime juice. Pour mixture into the pie crust.
Top the pie with sliced limes. Place the lid on top of the pie, secure and freeze pie overnight.
Remove from freezer, cut with a warm knife and serve
Recipe Tips & Variations
- Use fresh key lime juice for the best flavor.
- If you're making your own pie crust make sure the pie crust is fully baked before adding the filling, otherwise the crust will be soggy.
- Freeze overnight for best results.
- Make it gluten free by using a gluten free crust.
- If the pie is too hard, place on counter and allow to soften.
- Dip knife in a hot glass of water before slicing for a clean cut.
- This recipe serves about 8-10 depending on how you slice it. If you want to get more slices out of it, slice a little smaller.
