In separate pans, cook the sausage until no longer pink and eggs over medium heat. Chop the sausage as it cooks so it is in smaller pieces and crumbles.
Make an assembly line of sausage, eggs and cheese. Lay a piece of paper towels down per tortilla and put a tortilla on each one. Add a scoop of eggs, then sausage, and top with cheese. Use as much or as little as you want.
Roll the tortilla up in the paper towel to keep everything from falling out and the tortilla together. Take a piece of aluminum foil and roll each tortilla up in foil.
Put each wrapped burrito into a large freezer bag making sure the air is out and bag is sealed. Store in freezer for up to 3 months.
How to Heat Frozen Burritos
From Frozen to Microwave: Remove the foil from the burrito keeping the tortilla wrapped in the paper towel and place on a microwave safe plate. Heat for about 1 - 1 ½ minutes.
Thawed to Oven: Thaw out the night before. Preheat over to 350 degrees. Unwrap foil and paper towel from breakfast burrito. Cook for 12-15 minutes.
Put the remaining burritos back in the freezer when done and make sure the air is out of the bag and sealed.
