Flourless French Toast Sticks (Keto & Gluten Free)

Flourless French Toast Sticks are a great way to start the morning! These keto friendly, gluten-free, grain-free French toast sticks are made with a few ingredients to create a classic favorite without the carbs. Just dip, fry and enjoy!

Ingredients

  • 8 large eggs
  • ½ cup butter plus extra for frying
  • 4 ounces cream cheese
  • 2 tablespoons baking powder
  • 1 tablespoon vanilla extract
  • ¼ cup sugar substitute such as Lankanto or Monkfruit Sweetener
  • ¼ teaspoon cinnamon
  • Keto or sugar-free maple syrup

Instructions

  • Preheat oven to 350 degrees F.
  • Line a loaf pan with parchment paper and set aside.
  • In a bowl add butter and cream cheese and melt in microwave until melted.
  • In a blender, add the melted butter and cream cheese mixture along with eggs, vanilla extract, cinnamon and sugar substitute. Blend until fully mixed together.
  • Pour mixture into prepared loaf pan and bake for 20-25 minutes or until the loaf is set and top is golden brown.
  • Remove from oven and allow to cool to touch. Cut loaf into slices.
  • Add butter to a large skillet and heat over medium-high heat.
  • Fry both sides of french toast sticks until each side is a golden brown color. 
  • Serve with your favorite keto or sugar-free maple syrup and top with fruit if desired.

Notes

Recipe Tips

  • I recommend using about a 5X7 loaf pan for this recipe. 
  • Can add additional cinnamon on top of french toast sticks or even powdered sweetener after they are cooked.
  • If you are looking for a delicious keto maple syrup, my favorite are ChocZero and Lakanto. You can also use a sugar-free maple syrup found at the grocery store.
  • These french toast sticks are delicious with fresh berries on top for a healthy breakfast.
