Easy Oven Roasted Asparagus

Ingredients

  • 1 bunch asparagus washed and trimmed
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • ¼ cup shredded parmesan cheese
  • Kosher salt to taste
  • Pepper to taste
  • Juice of ½ lemon

Instructions

  • Preheat oven to 400 degrees F.
  • Lay a piece of parchment paper down on a cookie sheet.
  • Snap the ends off of each asparagus. To do so, bend the asparagus near the base. The asparagus will break off at the right spot.
  • Arrange the asparagus stalks on top of the parchment paper in a single layer.
  • Drizzle asparagus with olive oil. Season with kosher salt and pepper. Add minced garlic on top. Sprinkle cheese over top.
  • Roast for 15-20 minutes for thick spears and 8-10 minutes for thin spears and until tender.
  • Remove from oven, squeeze some fresh lemon juice over top and serve with your favorite main dish.

Notes

  • Try different seasonings such as red pepper flakes for a bit of spicy or Italian seasoning for a milder taste.
  • If you don't have minced garlic you can use garlic powder.
  • Add bacon bits. Trust us on this one, it's delicious.
  • To Store: Store in an airtight container in the fridge for up to 3 days.
  • To Reheat: Heat in microwave or oven to desired temperature.
