Creamy Mushroom and Spinach Pork Chops

Ingredients

  • 4 pork chops
  • 2 tbsp olive oil
  • 8 oz sliced mushrooms
  • 2 cups heavy whipping cream
  • 1 ¼ cup parmesan cheese
  • 4 cups spinach
  • 4 tbsp butter
  • 1 tsp oregano
  • 3 tbsp minced garlic
  • 1 tsp onion powder
  • Pinch of crushed red pepper
  • Salt and pepper to taste

Instructions

  • Season both sides of the pork chops with salt and pepper to your liking. In a pan add oil and pork chops and cook over medium high heat until the pork chops are cooked thoroughly at 145 F internal temp and brown on both sides. Set aside when done.
  • Using the same pan, add butter and sliced mushrooms to pan and sauté for about 5 mins or until soft. Then add the garlic and sauté for 30 seconds.
  • Add in the heavy cream, parmesan cheese, oregano, onion powder and crushed red pepper bringing to a simmer, stirring occasionally. Reduce heat and continue cooking until sauce has slightly thickened.
  • Add spinach to the pan and cook until wilted in the sauce. Add the pork chops back into the pan with the sauce to heat back up for a few minutes. Serve and enjoy!
