Instructions
Preheat the oven to 350℉.
Cook the bacon until crispy and set aside.
In a bowl, whisk the eggs with a little salt and pepper. Pour into a greased skillet and cooking into one large egg patty.
Remove the egg patty from the pan and cut into sandwich sized pieces.
Slice the ciabatta rolls in half and place the egg patty on the bottom half.
Top with bacon and a slice of gouda cheese.
Add the top bun and place the sandwich on a baking sheet.
Bake for 8-10 minutes or until the cheese is melted and the buns are lightly toasted.
