- 2 cups all-purpose flour
- 1 cup cocoa powder
- 2 teaspoons baking powder
- 1 ½ cup sugar
- ½ cup vegetable oil
- 3 large eggs
- 2 teaspoons pure vanilla extract
- Confectioners' sugar for dusting
Preheat oven to 375°F. Line a baking sheet with parchment paper.
In a bowl add eggs and beat. Add sugar and oil to bowl of beaten eggs and cream together. Mix in vanilla extract.
Combine dry ingredients with cream mixture and beat together until it becomes a fudgy dough.
Cover and chill in fridge for 1-2 hours. Shape into 1 inch balls, roll in powdered sugar and place on a lined cookie sheet.
Bake 8-10 minutes until edges are set and cookies look crinkles. Allow to cool slightly and transfer to cooling rack. Enjoy slightly warm!
How to Store
Once cooled, store in an airtight container on the counter at room temperature for 4-5 days.
To freeze the cookies, place in a freezer-safe container with wax paper in between layers for up to 3 months. When you're ready to eat them, defrost at room temperature until completely thawed.
