Ingredients

  • 1 pint heavy whipping cream
  • 1 - 14 oz. can sweetened condensed milk
  • 4 0.13 ounce packets cherry kool-aid
  • 1 cup key lime juice
  • 1 lime sliced into wedges
  • 1 graham cracker pie crust regular size

Instructions

  • Attach a whisk attachment to a stand mixer or hand mixer. Place heavy whipping cream in a bowl and mix for about 4 minutes on low speed. Adjust to higher speed once it thickens and mix for 2 more minutes. Once it becomes fluffy and resembles a whipped topping, then it's ready. If using a hand mixer it may take longer.
  • Fold in the can of sweetened condensed milk. Then, fold in cherry kool-aid. Next, fold in key lime juice. Pour pie mixture into the pie crust.
  • Slice lime into thin wedges. Garnish the pie with lime wedges all around the edge and a few in the middle. Place the plastic lid on top of container and press down all around the metal edging until secured. Freeze pie overnight.
  • Once frozen overnight cut with a warm knife and serve. Top with a scoop of vanilla ice cream or whipped cream if desired.

Recipe Tips

  • Can make your own crust! You'll need a good supply of graham crackers. The more finely you can process them, the better.
  • Try different kool-aid flavors. Leave out the lime juice and lime slices ingredients and swap out the cherry kool-aid for a different flavored pie. Some of my favorites are lemon, blue raspberry and strawberry.
  • If you don't have lime juice on hand use cherry limeade kool-aid packet instead to get the same flavor.
  • If you don't want it as sweet cut down on the amount of kool-aid packets. Try adding one packet at a time and mixing and then tasting. Add more to your liking.
