Blueberry Crumble Cake

Ingredients

Cake Ingredients

  • 1 ½ cups flour
  • 2 teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup sugar
  • 4 tablespoons butter
  • 1 egg
  • ½ cup milk
  • 3 cups frozen blueberries

Topping Ingredients

  • cup flour
  • ½ cup packed brown sugar
  • ½ teaspoon cinnamon
  • 4 tablespoons butter
  • ¼ cup chopped walnuts

Instructions

Prep the Oven and Pan

  • Preheat oven to 350 F degrees. Prepare a 9 inch square pan by spraying it with cooking spray making sure you get all the way up the sides of the pan and set aside.

Prepare the Cake

  • In a bowl, combine flour, baking powder and salt. Set aside.
  • In a separate bowl beat sugar and butter until creamy and smooth. Add the egg and beat well. Alternate adding the flour mixture and milk gradually to the bowl of sugar mixture and beat after each addition.
  • Pour the batter into the prepared pan spreading into an even layer. Top the batter with frozen blueberries.

Prepare the Topping

  • In a bowl, combine all topping ingredients and mix until it forms a crumbs like texture. Sprinkle topping over blueberries. 

Bake & Enjoy

  • Bake for 35-40 minutes or until toothpick inserted in the center comes out clean. Allow to cool for 10 minutes and serve warm.

Notes

Tips for the Best Blueberry Crumble Cake

  • Once cooled, refrigerate any leftovers in an airtight container for up to three days.
  • Make sure to grease the pan with butter or cooking spray so that the batter doesn't stick to the pan.
  • You can also make this recipe using frozen berries instead of fresh blueberries! Just fold them into the batter after everything has been mixed together but don't mix too much.
