Bacon Wrapped Jalapeno Poppers

Ingredients

  • 12 jalapenos cut in half with seeds and membrane removed
  • 1 8 ounce package cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 12 bacon slices

Instructions

  • Preheat oven to 400 F degrees.
  • Slice the jalapeno in halves lengthwise and remove the seeds and membrane. Set aside.
  • In a bowl mix together softened cream cheese and shredded cheddar cheese.
  • Spread the cheese mixture inside each jalapeno. Wrap a piece of bacon around each cheese filled jalapeno and arrange on a baking sheet. (can use a toothpick to secure bacon)
  • Bake for 15-20 minutes until bacon is crispy. Serve immediately with ranch or your favorite dipping sauce.

Notes

Tips for Making Jalapeno Poppers

  • Use fresh jalapenos for the best flavor, and if you want them to be a bit spicier, leave the seeds in. Remember not to touch your face until you've washed your hands.
  • If you don't like jalapenos, you could easily substitute them with something else such as sweet peppers.
  • Folding the bacon in half with the fat inside the pepper keeps it from burning, so you'll end up with juicy, smoky cool strips of bacon instead of crispy burnt ends.
  • Fill the peppers with the cheese before you wrap them in bacon so it will close and cook properly.  If you have difficulty getting your bacon closed, try wrapping it around the stem end of the pepper where it has more "give."
