Apple Feta Salad

Apple salad with feta and walnuts is refreshing and delicious no matter what season it is. Also make a great option for a quick lunch or side dish!

Ingredients

For the Salad

  • 6 cups spring mix salad
  • 1 green apple sliced or diced
  • 1 red apple sliced or diced
  • 1 cup walnut pieces
  • ½ cup crumbled feta cheese

For the Dressing

  • cup olive oil
  • 3 tablespoons white wine vinegar
  • 2 teaspoons stone ground mustard
  • ½ teaspoon minced garlic
  • ½ teaspoon dried oregano
  • teaspoon dried parsley
  • teaspoon onion powder
  • teaspoon black pepper
  • Salt to taste

Instructions

  • Slice the apples thinly.
  • Add the salad ingredients to a large serving bowl.
  • In a small bowl, whisk together the ingredients for the salad dressing until well blended.
  • Pour the salad dressing into the bowl of salad and toss together to coat evenly.
  • Serve and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 1-2 days. The apples may soften over time.
