Slow Cooker Chicken Gnocchi Soup

Ingredients

  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 16 oz package of potato gnocchi
  • 4 cups chicken broth
  • 2 cups whole milk
  • 1/4 cup flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 large onion diced
  • 1 tbsp garlic minced
  • 1 /4 teaspoon thyme
  • 2 carrots peeled and diced
  • 2 celery stalks diced
  • 1/2 cup grated Parmesan cheese
  • 2 cups baby spinach

Instructions

  • Add chicken breasts to crock pot and season with salt, pepper, thyme and garlic.
  • Place diced onions, celery and carrots on top. Pour chicken broth in, cover and cook on low for 6-8 hours or high for 4-6 hours.
  • In a bowl whisk together milk and flour. Pour into crockpot along with potato gnocchi, parmesan cheese and spinach.
  • Stir, cover and cook on low for 30 minutes or high for 15 minutes or until potato gnocchi is cooked through.
  • Serve and enjoy!

Notes

Recipe Variations

  • Swap out the chicken for another protein, such as sausage.
  • Add in extra vegetables, like broccoli, kale, or peas.
  • Instead of gnocchi, you could use another type of pasta, such as shells or macaroni.
  • For a vegetarian version, leave out the chicken and use vegetable broth.
