- 1 ½ cups All-Purpose Flour
- ½ teaspoon Baking Powder
- ½ teaspoon Baking Soda
- ½ teaspoon Salt
- 1-2 teaspoons Pumpkin Pie Spice to taste
- ¾ cup White Sugar
- ¼ cup Brown Sugar
- ⅓ cup Vegetable Oil
- 2 Eggs
- 1 teaspoon Vanilla Extract
- 1 ½ cups Grated Zucchini packed
Streusel Topping Ingredients
- ½ cup All-Purpose Flour
- ½ cup Brown Sugar
- 1 Tablespoon Pumpkin Pie Spice
- 3 Tablespoons Butter melted
Preheat oven to 350F degrees.
Grease and flour a standard-sized loaf pan. Set aside.
In a small bowl, whisk together the flour, baking powder, baking soda, salt and pumpkin pie spice. Set aside.
In a large bowl, beat together the sugars and oil until well combined. Beat in the eggs and vanilla extract until sugar no longer appears grainy.
Stir in the grated zucchini, followed by the dry ingredients. Stir until just moistened and no dry lumps remain. Fold the zucchini bread batter into the prepared loaf pan and set aside.
In a small bowl, combine all of the streusel topping ingredients, then sprinkle over the batter in the loaf pan.
Bake for 50-55 minutes, until well-browned and an inserted toothpick comes out clean. Serve warm.
Tips for the Best Tasting Bread
- Use room temperature eggs at least 10 minutes before beating them in a mixing bowl.
- Do not over-mix the batter when adding wet and dry ingredients together.
- Grate your zucchini into a bowl with large holes or grate into a cheesecloth and squeeze out excess water before adding it to the batter.
- Use slightly cooled melted butter not too hot when adding it to the batter.
- Be sure to grease and flour the pans well using non-stick baking spray with flour for easy removal of the baked loaves of bread.
- This recipe makes for great muffins too—just bake in a 350 degree oven for 20 minutes and test until done.
Zucchini Bread Variations
- If you are feeling especially festive, try adding some orange zest to the batter—it brings it up a notch.
- Toss in some pumpkin seeds to the streusel topping for an extra bit of crunch.
- For a richer, more decadent twist, try using chocolate chips in the streusel topping instead.
- For an added treat, drizzle melted dark chocolate over the bread once it is cooled.
- Add raisins or dried cranberries to this recipe if you like that added bit of tang.
