Rosemary Roasted Potatoes

Ingredients

  • 6 red potatoes cut into quarters
  • 3 tablespoons olive oil
  • 3 tablespoons minced garlic
  • Kosher Salt to taste
  • Pepper to taste
  • 2 -3 tablespoons Rosemary

Instructions

  • Preheat oven to 400 degrees F.
  • Cut up potatoes and add to a large ziploc bag. Add olive oil and garlic to bag. Seal and mix all together in bag until potatoes are fully coated.
  • Line a baking sheet with aluminum foil and spread potatoes in an even layer. Sprinkle kosher salt, pepper and rosemary over top.
  • Bake for 45 minutes or until tender and browned on edges. Be sure to turn potatoes over halfway through cooking time.
  • Remove from oven and serve with your favorite main dish. Enjoy!

Notes

Recipe Variations

  • If you have any of these herbs or spices on hand, Smoked Paprika, Garlic, Sea Salt & Cracked Pepper, toss them in with your potatoes for a smoky, garlicky take on basic roasted potatoes.
  • Add red pepper flakes for a bit of heat and give them an extra sprinkle of salt at the end.
  • Add cheese such as grated parmesan cheese sprinkled on top and bake.
  • Add a bit of crisp and flavor with Bacon Bits. Before serving, top your baked potatoes with bacon bits for a tasty treat!

Tips for Perfect Roasted Potatoes

  • Line your baking sheet to prevent the potatoes from sticking to the pan.
  • Avoid overcooking. Stick a fork straight down into your potato. If it goes in easily, they’re done. If there’s still resistance, put them back in for another five minutes or so and check again.
  • Don't overload the tray. Lay out the potatoes in a single layer so they get nice and brown and crisp evenly.
  • Make sure the potatoes are evenly coated with oil. This is what makes them cook perfect.
