Rainbow Pancakes

These Rainbow Pancakes are a fun and unique way to enjoy breakfast. Perfect for St. Patrick's Day or whenever you want to brighten your day.

Ingredients

  • 1 cup of homemade pancake mix
  • 1 cup of milk
  • 1 egg
  • Food Coloring
  • Airhead Extreme Rainbow Candy
  • Whipped Cream

Homemade Pancake Mix Ingredients (this will make more than what you need and can be stored for later cut recipe in half)

  • 4 cups all-purpose flour
  • 4 tablespoons granulated sugar
  • 2 tablespoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt

Instructions

  • Mix pancake batter as directed on the box or by using my homemade pancake mix.
  • Separate into bowls and add food coloring to each bowl until you get the desired color and mix well.
  • Heat a non-stick pan or griddle over medium-low heat.
  • Using one color at a time, pour pancake batter into heated pan or griddle. Cook until bubbles appear on top and look like they are about to pop (about 40-50 seconds) and flip.
  • Cook on other side for the same amount of time. Repeat with all colors until all pancake batter is gone.
  • Stack pancakes and serve with a rainbow and clouds on top by using a rainbow airhead and 2 dollops of whipped cream connecting or with syrup.

Notes

If using boxed pancake mix, use ingredients and directions on box.
