Ingredients for Kielbasa Bacon Bites
- Fathead Dough
- 1 package Kielbasa sliced
- 1 Sweet Onion thinly sliced
- 6 strips Bacon cut into small pieces
- 1 ½ cups G Hughes Sugar-Free BBQ Sauce
- Parsley finely chopped
Ingredients for Fathead Dough
- 3 cups Mozzarella cheese shredded
- 4 oz. cream cheese cut into cubes
- 2 large eggs
- 2 ⅔ cups almond flour
How to Make Kielbasa Bacon Bites
Preheat oven to 350 degrees F.
In a large skillet, cook Kielbasa over medium heat until brown and cooked thoroughly. Remove Kielbasa and set aside.
Cut the bacon into small pieces and cook in a large pan over medium high heat until bacon is crispy. Set bacon aside and leave the grease in pan
Add sliced onions to the pan with bacon grease and saute until golden brown.
Add the bacon and Kielbasa back to the skillet with onions and pour the BBQ sauce over top stirring making sure everything is fully coated and allow to simmer for a few minutes. Remove from heat and set aside.
Make the Fathead Dough
Add mozzarella cheese and cream cheese in a bowl and microwave for 45 seconds. Stir. Put back in microwave for another 45 seconds.
Beat eggs and add to mozzarella and cream cheese plus add in almond flour and mix.
Knead with hands until dough forms.
Lay a piece of parchment paper down, add the dough to the top and then lay another piece of parchment paper on top of the dough.
Roll out the dough until it’s about a ½ inch thick. (If there is too much dough you may need to separate it in half and repeat the steps of rolling it out.)
Take off the top parchment paper and leave the bottom one for the dough to set on.
Using a knife cut the dough into 24 mini squares and big enough to fit in muffin tin.
Assemble the Cups
Spray a 12 count mini muffin tin with cooking spray. Place a square over top each muffin tin and press down gently to form little cups. Spoon the Kielbasa mixture on top of the dough until the cups are full.
Bake at 350 degrees for 15 – 20 minutes, or until dough is completely done, and golden brown.
Garnish with parsley, serve, and enjoy!
Recipe Tips & Variations
- Make it spicy by adding some heat using hot sausage, chopped jalapenos in the mix or Cajun seasoning.
- Don’t have Kielbasa on hand? Swap out for any kind of smoked sausage.
- Don’t want to make it keto? Swap out fathead dough with frozen phyllo or pizza dough and use regular BBQ sauce.
- Save time by making these up ahead of time! Just follow the directions, store appropriately and reheat the next day.
