- 1 cup powdered sugar sifted
- 1 cup unsalted butter softened
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 ½ cup green candy melts
- Assorted Christmas sprinkles
Preheat oven to 300 F. Generously oil two 9 inch pie pans and line with parchment paper. In a large bowl, add powdered sugar, softened butter, and mix until light and fluffy. Then add vanilla extract and continue mixing until well combined.
Next add all-purpose flour, salt, and mix until well incorporated. Divide cookie dough in half, place into the pie pans and spread the cookie dough out evenly. Poke the cookie dough with a fork.
Bake for 30 minutes, then remove from oven and place onto cookie board and using a sharp knife, immediately cut each shortbread round into 8 wedges. Transfer onto cookie rack and cool completely.
Melt the candy melts in a plastic baggie or a piping bag. Drizzle over cookies and immediately garnish with sprinkles.
- It’s important to cut the cookies while it's still warm, otherwise, it will crumble if you try to cut it after it has cooled.
- Cookies can be stored for 3 days in an airtight container and up to 1 week in the fridge.
- Feel free to use chocolate chips instead of the candy melts, but make sure to add some oil to thin out the chocolate chips before drizzling.
