Ingredients

  • 4- 5 boneless skinless chicken breasts
  • 1 teaspoon of salt
  • ½ teaspoon of black pepper
  • 1 teaspoon of your desired herbs such as thyme, oregano, or parsley I used thyme
  • 32 oz chicken broth or water
  • 1 celery stalk cut in half
  • ½ onion pieces
  • 2 cups broth or water

Instructions

  • Place the chicken breasts in a large pot and cover with water or broth.
  • Add the salt, black pepper, celery stalk, onion and desired herbs in the pot.
  • Bring the water to a boil over high heat, then reduce the heat to medium-low and let simmer.
  • Cover the pot with a lid and let the chicken cook for about 15-20 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F.
  • Remove the chicken from the pot and let it rest for a few minutes before slicing or shredding. Serve as desired.

Notes

Note: you can also use other seasonings like garlic powder, onion powder, or paprika for more flavor.
