Ingredients
Salmon filets2 large or 4 small
¼cupchopped cilantro plus more for garnish
3tablespoonsminced garlic
2tablespoonsolive oil
1tablespoonsoy sauce
Salt & pepper to taste
Juice from ½ of a lime
Lime slices from other half
Instructions
Preheat the oven to 425°F.
Prepare a baking dish with cooking spray. Add salmon fillets to the baking dish, skin side down, and season with salt and pepper.
Mix olive oil, cilantro, garlic, lime juice, and soy sauce in a bowl.
Pour the mixture over the salmon and use your hands to rub the mixture into the fillets evenly.
Bake uncovered for 12-15 minutes until the salmon is flaky.
Serve salmon over rice and top with sliced lime wedges.
Notes
Store remaining leftovers in an airtight container in the fridge for up to 3 days. Reheat to desired temperature in microwave or oven.
