Ingredients

Meatloaf Ingredients

  • 2 pounds ground beef
  • 1 onion chopped
  • 1 green pepper chopped
  • 3 cloves garlic chopped
  • 1 Tbsp oil to sauté
  • 2 eggs
  • 1/2 cup pork rind crumbs or plain bread crumbs if not doing keto
  • 1 1/2 tsp garlic salt
  • 1/2 tsp pepper
  • 1/2 lb bacon

Glaze Ingredients

  • 1/2 cup sugar free ketchup or regular ketchup if not doing keto
  • 2 Tbsp hot sauce
  • 2 Tbsp Swerve brown sweetener or brown sugar if not doing keto
  • 1/2 tsp paprika

Instructions

  • Preheat oven to 375 degrees F.
  • Sauté onion, green pepper, and garlic in pan. When browned, set aside and let cool.
  • In medium bowl, combine ground beef, bread crumbs, eggs, garlic salt, and pepper together. Mix in cooled onion, pepper, and garlic. Press meatloaf mixture into 9-inch cast iron pan. Add raw bacon to top. I like to do a lattice pattern. Put in oven and bake for 50 minutes.
  • Meanwhile, combine all ingredients for glaze. After meatloaf has cooked for 50 minutes, remove from oven and brush with glaze. Cook for 10 more minutes. Remove from oven. Make sure internal temperate is at least 160 degrees. Let meatloaf set for 10 minutes. Slice into pieces. Serve directly from cast iron.
