Gingerbread Energy Bites

Ingredients

  • 1 cup dates
  • ¾ cup pecans
  • 1 tablespoon molasses
  • 1 tablespoon ground flaxseed
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • Optional: 1 oz. 70% dark chocolate

Instructions

  • Place a piece of parchment paper on a plate and set aside.
  • Place dates on a cutting board and slice down the center to remove the pits.
  • Roughly chop up the pitted dates and place them in a food processor. Pulse a few times until they break down into a thick paste consistency.
  • Add the remaining ingredients with the exception of the chocolate to the food processor and pulse until all ingredients are broken down and well incorporated.
  • Scoop up ingredients in a teaspoon and roll into a ball using clean hands. Place balls on prepared plate.
  • Place the dark chocolate in a small glass bowl and microwave until melted. Pour the melted chocolate into a small Ziploc bag and cut off just the edge of one corner.
  • Drizzle the melted chocolate over the energy balls. Place in the fridge to allow the chocolate to harden.
  • Serve.

Notes

Store energy balls in an airtight container in the fridge for up to 1 week.
