Chicken Yakisoba

Ingredients

  • 1 lb chicken breast cut into small strips
  • 1/2 head cabbage chopped
  • 1/2 carrot julienned
  • 1/2 onion diced
  • 1 tablespoon garlic minced
  • 1/2 teaspoon ginger paste
  • 1 red bell pepper cut into small strips
  • 1 tablespoon vegetable oil
  • 2 7 oz package of yakisoba noodles

For the sauce:

  • 3 tablespoons soy sauce
  • 3 tablespoons oyster sauce
  • 3 tablespoons mirin
  • 1 tablespoon sugar

Toppings: (optional)

  • Sesame seeds
  • Green onions

Instructions

  • In a small bowl, whisk together all of the ingredients for the sauce. Set aside.
  • In a large skillet or wok over medium-high heat, add the oil and let it heat up. Add the chicken strips and cook until they are browned and cooked through. Remove from the pan and set aside on a plate.
  • Add the cabbage, carrots, onion, garlic, ginger, and red bell pepper to the pan and cook until the vegetables are tender.
  • Cook noodles according to package. I did the microwave method to save on time.
  • Add the chicken back into the pan along with the sauce and noodles. Toss everything together until it is evenly coated.
  • Top with sesame seeds and green onions, if desired.
