Chicken Fajita Cups
These Chicken Fajita Cups are made with ground chicken and baked inside soft, flaky biscuits. Perfect for a quick weeknight dinner, appetizer or meal prep for the week!

- 1 tablespoon olive oil
- 1 lb ground chicken
- 1 red bell pepper diced
- 1 yellow pepper diced
- 1 small onion diced
- 1 packet fajita seasoning
- 1 16 ounce can refrigerated biscuit dough
- 1 cup shredded Mexican Style cheese
- Green onion sour cream, salsa, hot sauce (optional toppings)
Preheat oven to 350F degrees.
Heat olive oil in a large skillet over medium heat.
Add ground chicken, peppers, and onion to skillet and cook until chicken is no longer pink and the vegetables have started to soften.
Drain grease from the pan. Sprinkle fajita seasoning over top and add 2/3 cup of water. Stir and let simmer.
Open up the biscuit dough and split in half so you have 16 biscuit rounds.
Grease a 24 cupcake pan and press each biscuit round gently inside each opening to avoid breaking biscuit dough.
Fill each cup with the chicken fajita mixture and top with cheese.
Bake for about 15 minutes or until the cheese is melted and biscuits are golden brown.
Recipe Tips & SubstitutionsÂ
- Can substitute ground chicken for ground beef or strips of steak.
- Could use rotisserie chicken in place of ground chicken to save on time.
- Don't overstuff! Be careful to not overstuff the biscuit cups with the fillings and avoid spilling out.
- Can swap out Mexican style cheese for taco blend or mild cheddar.
- If you don't have fajita seasoning you can use a taco seasoning packet or make homemade taco seasoning from spices.
- Like it spicy? Try spicy taco seasoning in place of regular taco seasoning for a bit of a kick.
- Make it a meal by serving it with a side of rice and a salad.
- Can use an 8 large muffin sized cups pan without splitting dough in half.
