Potato Cake Ingredients
Serves 8
Butter
Bacon, cooked and crumbled
Large onion, chopped
Green pepper, diced
Ham, diced
Mashed potatoes
Shredded mild cheddar
Flour
Eggs
Black pepper
Vegetable oil
Sour cream (used for potato cake topping)
How to Make Loaded Fried Mashed Potato Cakes
Place bacon in a medium skillet and cook on medium high heat until brown and crispy on both sides. Place bacon on a paper towel and blot with another paper towel to get rid of excess grease. Then, crumble bacon into small pieces.
Keeping the bacon grease in the skillet, add butter and melt on medium high heat. Add onions, green pepper and ham and cook until browned, about 15 minutes. Set aside.
In a large bowl, add mashed potatoes, bacon, shredded cheese, eggs, flour and pepper along with onions, green pepper and ham and mix all together.
In a clean skillet heat vegetable oil over medium heat. Place heaping spoonfuls of potato mixture into heated oil and then flattening with the back of your spoon. Cook 5 minutes on each side until golden brown. Drain excess grease on paper towel.
Serve warm with a dollop of sour cream on top.

- 8 slices bacon cooked and crumbled
- 1/2 large onion chopped
- 1 green pepper diced
- 1/2 cup ham diced
- 1 1/4 cups mashed potatoes
- 1 cup shredded mild cheddar
- 3/4 cup flour
- 2 eggs
- 1/2 tsp black pepper
- 2 tbsp sour cream used for potato cakes topping
- 4 tbsp vegetable oil

I like too use mine with Salmon. make just the same way, just add canned salmon. Delicious.
